Beef and Broccoli



Try this easy recipe for authentic Chinese beef and broccoli with white rice.

Beef and broccoli is a staple dish that you’ll find at nearly all Chinese American restaurants — along with other favorites such as fried wontons, kung pao chicken, egg rolls, and Mongolian beef. I love beef and broccoli because (a) I can’t resist anything with tender and tasty strips of flank steak, and (b) it’s such an easy one-pan stir fry recipe. Also, if you’re a huge broccoli fan like me, you’ll love these juicy and flavorful bites of broccoli in between mouthfuls of meat and rice.


Beef and broccoli is a delicious meal to enjoy for lunch or dinner, and leftovers reheat well in the microwave. I usually serve it with cooked white rice. There’s a decent amount of sauce that comes with this recipe, so you’ll want some rice to help sop up the sauce. Yum.


Beef and Broccoli Recipe

Ingredients

  • 1 pound flank steak sliced into 1/4 inch thick strips
  • 3 cups small broccoli florets
  • 1/2 cup beef stock
  • 5 cloves garlic minced
  • 2 tablespoons corn starch
  • 1 tablespoon canola oil

 

For the sauce:

  • 1/2 cup low sodium soy sauce
  • 1/4 cup brown sugar
  • 2 teaspoons corn starch

Buffalo Chicken Sliders



It’s time for sliders.  Playoffs are over, the Super Bowl is near, and party food needs to be made in abundance.  Buffalo chicken sliders, carnitas sliders, philly cheesesteak sliders, roasted garlic hummus, and buffalo chicken dip are a few options I have to offer to you.

Who doesn’t love buffalo chicken?!  We are a household that appreciates wings, so buffalo chicken sliders received a warm welcome last weekend when they graced our [coffee] table one Sunday afternoon.


And just like that, they were gone.  All four of them.  Why did I just make four, you ask?  Because my blog focuses on recipes for two people … and I really don’t feel like we need more than two per person, right?

If you need sliders for MORE than two people, you are in luck!  This recipe can easily be doubled, tripled, or quadrupled!  Luckily, the ingredients in this recipe have some room for variation, so this recipe is one that you can easily make into a large batch of you please.  If you do, I really want to hear how you liked it!



Buffalo Chicken Sliders Recipe

Easy, delicious buffalo chicken sliders are made with rotisserie chicken, hot sauce, ranch, shredded cheese, and love. perfect for football season, or any party!
Ingredients :
  1. 1 Tbsp. butter
  2. 1 cup shredded rotisserie chicken
  3. 1/3 cup buffalo sauce
  4. 1/2 Tbsp. garlic powder
  5. salt and pepper (to taste)
  6. 1/2 cup shredded cheddar
  7. 1/4 cup of your favorite ranch dressing

Cheesy Taco Pasta



Cheesy Taco Pasta is easy to make and tastes like the Hamburger Helper you used to eat as a kid except better. Much better. 

Cheesy Taco Pasta is my nod to the hamburger helper I grew up eating as a kid. While this isn’t exactly the “crunchy taco hamburger helper” because I skipped adding the tortilla chips on top, the ooey gooey meat and cheese sauce is still the same and with just a few ingredients!

  
You can certainly add your own fresh vegetables to the mix instead of the salsa, but I used a good jarred salsa and it tasted fantastic. On occasion I’ve also used fresh salsa (I firmly believe that recipe is one of the best ever), but the higher water content of it makes the pasta more watery.

You can also make this Cheesy Taco Pasta as cheesy as you’d like. I added only a single cup of cheese, while some in my family will add additional piles of cheese to their plate. If you want your pasta to be really cheesy I suggest 2 cups of cheese.

Jalapeno Poppers are one of the most popular recipes on the blog and based on our mutual love for these addicting appetizers, I thought I’ll share with you another of my favorite ways to make them, with chorizo stuffing!


I took these Mexican-style jalapeno poppers for a test run yesterday during our Dodger’s game shindig and they were quite the hit! Everyone at the party beelined for them, I had to make another batch in the middle of the game which was 10 innings and 5 hours long, btw.

Bacon Cheeseburger Sloppy Joes had to happen. After these Philly Cheesesteak Sloppy Joes made immediate waves on this day last month, I knew I wanted the one month celebration to be either another Philly Cheesesteak recipe or another sloppy joe recipe.


Then we made these Bacon Cheeseburger Sloppy Joes and I had that sweet sweet Joey Tribbiani moment and I knew what my one month celebration recipe was going to be. There really could be no competition.

The sandwiches are crispy, cheesy and the ketchup and mustard mixture perfectly mimicks the flavors of your favorite bacon cheeseburger. With the gravy and cheese mixture even the ground beef crumbles will be so delicious and sloppy you’ll forget all about that takeout bacon cheeseburger!

Creamy Tomato and Spinach Pasta



Easy wins again! I’m on day 6 of an 8 day work week, so that means two things: I’m tired and I’m hungry. Quick skillet pasta dishes like this Creamy Tomato and Spinach Pasta are perfect for such an occasion. They require only a few ingredients, cook up super fast, and leave me feeling full and happy! 


This version of Creamy Tomato and Spinach Pasta uses just a touch of cream cheese and Parmesan to make a regular tomato sauce ultra rich and creamy. If you’re not into cream cheese, you could also add a splash (1/4 cup or so) of half and half to achieve a similar effect. I used regular pasta, but whole wheat would actually be pretty good in this and would add some extra fiber and nutrients to make it a more well rounded meal. I was lucky enough to get spinach on sale for $0.99 per bag (score!), but if fresh spinach is just out of your price range, this would also be really good with sliced mushrooms. Just cook the mushrooms along with the onions and garlic in the beginning. Or, hey, you could always do a plain creamy tomato sauce. Nothin’ wrong with that!


Anyway, tomorrow is Monday (again) and the week will be long, so I hope this recipe helps make dinner time a little faster, easier, and more enjoyable for you this week! Enjoy!

  • 1/2 lb penne pasta 
  • 1 small onion 
  • 2 cloves garlic
  • 1 Tbsp olive oil 
  • 15 oz can diced tomatoes 
  • 1/2 tsp dried oregano 
  • 1/2 tsp dried basil 
  • pinch red pepper flakes (optional) 
  • 1/2 tsp salt 
  • freshly cracked pepper to taste 
  • 2 Tbsp tomato paste 
  • 2 oz cream cheese 
  • 1/4 cup grated Parmesan

Thai Meatballs

With regards to the family beach BBQ last Friday evening, I am very pleased to report that Dozer only stole 2 hot dogs (of which only one was straight out of a childs’ hand), did a face plant in only one full dinner plate (the other 3 plates he launched himself onto were half eaten abandoned ones), was treated to only a few dozen treats from the children who kept running up and asking “can he have this?”, shoving a grubby hand clutching a half eaten sausage or crushed potato chips or whatever it was they happened to be eating towards his giant, slobbery jaws before I even had a chance to say “yea” or “nay”.


You can mix together mince with coriander/cilantro, garlic and a dash of soy and get away with calling that Thai. And they will be ok(ish). But if you want some Thai Meatballs that are seriously delicious, and really truly do taste real-deal Thai, then you’re going to need the help of a few more things.

I think you’ll be familiar with most of the items in these meatballs, except perhaps this one – Kaffir Lime Leaves. Now, before you run around town trying to hunt these down in an Asian store (albeit Sydney-siders can just pop into Wooles, Coles and Harris Farm for these nowadays!), let me just stress this fact: yes it adds a little something-something that is so authentically posh-Thai-restauranty (like Longrain and Sailors Thai here in Sydney), but it isn’t mandatory!! These are still smashing meatballs even without kaffir lime leaves.

Thai Meatballs Recipe

The beautiful, fresh Thai flavour in these meatballs are amazing! Truly like something you'd get at those posh Thai restaurants. These aren't authentic Thai, as far as I know there really aren't meatballs in Thai cuisine (at least, not like this, they have them in soups), but all the flavourings in this are real-deal-Thai.

Ingredients
Meatballs:
  • 500 g / 1 lb pork mince (ground pork, or chicken)
  • 1 tbsp lemongrass paste (or finely chopped fresh) (Note 1)
  • 1 tsp grated ginger
  • 3 cloves garlic , minced
  • 3 kaffir lime leaves, stem removed and very finely shredded, optional extra (Note 2)
  • 3 Thai or birds eye chillies , seeds removed and finely chopped (Note 3)
  • 1/4 cup coriander/cilantro , leaves and stem finely chopped (Note 4)
  • 1 tsp sugar (any)
  • 1 tbsp fish sauce (can sub with soy sauce if required)
  • 3/4 cup panko breadcrumbs (+ extra 1/4 cup if needed)
  • 1 small egg
  • Oil spray
Sweet Chilli Dipping Sauce:
  • 1/2 cup / 125 ml sweet chilli sauce , store bought (Note 5)
  • 1 garlic clove , minced
  • 2 tbsp lime juice , plus more to taste
Optional garnishes:
  • Coriander/cilantro leaves , finely sliced large red chillies
