Chicken Tikka Masala



If I was to have one tagline in life, I actually think it would be ‘Aileen Cox Blundell – She loves curry’ (or something in that vain). In all seriousness though (and I take curry very, very seriously) it is my favourite meal in the world. When we go camping, I bring curry to reheat. When I bring a dish for dinner, it will always be a curry and when my friends come over for diner… yes you’ve guessed it, your getting curry. My husband and I loved curry so much that when we got hitched we backpacked through the west coast of India, just for the food alone!


Introducing your baby to spices in any form can be worrying for parents but just remember that spices do not always mean ‘burn your mouth spicy’, they mean a flavoursome curry filled with spices – cumin, coriander, turmeric or cinnamon. And getting your little one used to these flavours is just amazing! Think of the things you can cook for them, from India or Thai curries to Mexican Chillis and everything in-between.


Chicken Tikka Masala Recipe

 

 Ingredients : 

  • 1 large white onion
  • 6 cloves garlic
  • 2 large thumb size ginger
  • 60ml rapeseed oil
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cinnamon
  • 1 teaspoon garam masala
  • 1 teaspoon turmeric
  • 1/2 teaspoon mild chilli powder
  • 1 tin chopped tomatoes
  • 4 free range chicken breasts
  • 4 tablespoons ground almonds
  • 2 tablespoons desiccated coconut
  • 6 heaped tablespoons greek yogurt
  • Pepper to season
  • Bunch fresh coriander to garnish
